Pasta anyone? :)


Ok, so today didn’t go quite as well as we might have hoped. In fact it did not go well at all. Peggy ( the one who has been interested in a vintage buffet) backed out after speaking with her husband. They are strapped too. AND The meeting that my husband had with the Shriners was unsuccessful. Oh WELL! I’m not complaining. Tomorrow things will be better. I am certain.

Yes today, our food rations are pretty low BUT we have enough boxed pasta in the cupboard to feed an army… . Hence, my most clever blog title! TRUE! If I learned anything from this experience, is there’s lots you can do with pasta. I also found a package of instant mashed potatos ( my comfort food, seriously! 🙂 so that’s what I am having for dinner.

AGAIN I am not complaining. Some don’t even have that so NO this is NOT a desperate plea. Just the reality of the day.

Tomorrow things will be better.

Quick, Cheap & Easy Chicken Alfredo ( Serves 2-3, $4 )

1 Pkg Pasta Side Dish ( I use Alfredo, but the possibilities are endless )
Knorr puts out a good product, but store brands work just as well.
1 Large Can of White Meat Chicken (DG, Clover Valley Brand)
1- Canned Vegetable ( I usually use peas or green beans, drained )

You will need margarine or butter and milk for this recipe but the rest of the ingredients, come straight from the pantry.

Season to taste. And if you can afford to by all means, get creative with this recipe but it is pretty good as is. 🙂

This recipe ( above ) costs less than $4.00, especially if you shop at discount stores as I do.

I usually start with a 10 inch fry pan, add a bit of margarine, and then add drained chicken. Saute for a few minutes . Otherwise, you prepare the Alfredo side dish according to package directions in the same pan.

Serve the veggies on the side or just add them to the recipe which is what I usually do. Your choice.

Quick, Cheap & Easy Chicken Alfredo will feed 2 easily, or even 3 in a pinch but there are definitely no leftovers.

To stretch it further, use two packages of the Alfredo side dish or double, or triple the recipe as needed .
